Les Bleus came through a fiery contest against Argentina to reach this stage of the competition, while the Pharaohs required penalties to edge past Paraguay.
The clash is being shown live on Eurosport 5 and Discovery+ in the UK.
The semi-final will take place at 20:00 BST on Monday 5th August at Stade de Lyon, Decines-Charpieu.
The victory over Argentina extended France's under-23 side's unbeaten streak to 10 matches, a run which includes eight wins with six of those coming to nil.
Les Bleus are yet to concede a goal in the tournament, keeping four clean sheets in a row, while they have scored seven times.
France are aiming to reach the final for the first time since the 1984 Games in Los Angeles, when they took home gold after overcoming Brazil. They had beaten Egypt 2-0 in the quarter-finals that year, their sole previous meeting at the Olympics.
Egypt surprisingly topped Group C ahead of Spain, but they needed an 88th-minute equaliser to save themselves from a quarter-final exit against Paraguay.
The Pharaohs won 5-4 on penalties to progress to the semi-finals for the second time, having previously reached this stage in 1964 in Tokyo.

France will be forced into one change from their quarter-final victory over Argentina, with Enzo Millot shown a red card in the hot-tempered post-match scenes. Maghnes Akliouche, 22, is in line to take his place in midfield.
Michael Olise, Jean-Philippe Mateta and Alexandre Lacazette are all expected to retain their places in the starting line-up.
After playing 120 minutes and then going through a penalty shootout, Egypt may decide to make some changes to freshen things up, with Bilal Mazhar and Mostafa Saad pushing for starts.
