After taking the first set 6-3, Alcaraz then found himself two sets to one down against Zverev, who was attempting to secure his maiden Grand Slam title.
Alcaraz bounced back emphatically in the fourth to win 6-1 and take the final into a deciding set.
The decisive moment in the match came at 1-1 in the fifth as Alcaraz broke the serve of the German to take a lead which he didn't relinquish despite some injury concerns. Alcaraz then secured a second break to win the match 6-3 2-6 5-7 6-1 6-2.
The victory at Roland Garros is Alcaraz's third Grand Slam after winning the 2022 US Open and last year's Wimbledon title, while Zverev's wait continues.
Alcaraz, who defeated seven-time champion Novak Djokovic at SW14 last year, is the narrow favourite for this year's tournament ahead of Australian Open champion Jannik Sinner, while Djokovic is 7/2 to overcome his fitness issues and equal Roger Federer's tally of eight titles.
